Tony Horton: Lemon Vinaigrette


This is from Tony's book, "Bring it"!

Ingredients
Juice of 1 lemon
¼ cup olive oil
½ cup seasoned rice wine vinegar
1 tablespoon Dijon mustard
1 shallot, minced finely (optional)

Directions
Puree the lemon juice, oil, vinegar, mustard, and
shallot in a blender, or combine them in a bottle and
shake well to mix.

Makes approximately 1 cup
