Raw Berry Ice Cream


2 cups raw cashews soaked 4 hours, 2 cups berries (strawberries, blueberries, cranberries,
etc). 4 bananas, zest and juice of one lime or lemon.

Process the cashews, banana, half of the berries and lime or lemon juice in a food processor
until nice and creamy. Pour the mixture in a freezable container, fold in rest of berries and
freeze for a couple of hours until set.

Top with fresh fruit or fresh fruit puree.
