Perfect Crock Pot Pulled Chicken and Healthy Cole Slaw

Prep Time: 15 minutes

Cook Time: 8-9 hours


Ingredients (6-8 servings)

  • one large roaster chicken (6-8 lbs)
  • 1/2 cup of preferred barbecue sauce
  • 1/2 cup water
  • 1 tsp liquid smoke
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup apple cider vinegar
  • 1/4 cup Frank’s Red Hot (or hot sauce of choice)
  • 1 tsp dry mustard
  • 1/2 tsp granulated garlic
  • 1/4 tsp onion powder

for the cole slaw

  • 1/4-1/2 head of red cabbage, shredded
  • 1, individual sized container of chobani plain greek yogurt
  • 1 tsp brown sugar
  • 2 TBSP apple cider vinegar
  • 1 TBSP lemon juice
  • 1/4 tsp celery salt
  • 1/2 tsp black pepper

Instructions

combine ALL of the ingredients for the chicken in the crock pot and set on medium-low for 8-10 hours.

when it is cooked, remove and discard skin,

pull the meat off of the bone

discard the bones

shred the chicken with two forks and return to the crock pot with the sauce in it.

for the cole slaw

combine all of the cole slaw wet ingredients in a bowl and whisk

pour over cabbage and toss

let sit 15-20 minutes

serve
