Yummy Chicken Provolone Skillet




This is so incredibly delicious...I can't even begin to tell you!

We are having this for dinner.

1-1/4 lb skinless, boneless chicken breasts
2 Tablespoon Olive Oil
2 Med. Zucchini Sliced
1 cup chopped Onion
1 can (14-1/2 oz) Del Monte Stewed Tomatoes
1/2 teaspoon dried Italian Seasoning, crushed
1 cup (4 oz) shredded Provolone Cheese (low fat or non fat)

1. Season chicken with salt and pepper.
Cook Chicken in hot oil in large skillet over medium heat for 12 minutes, turning once.
Remove chicken, keep warm.

2. Cook and stir zucchini and onion in same skillet over med-high heat, 5 mins.
Add undrained tomatoes and italian seasoning.
Bring to a boil; reduce heat and simmer, uncovered for 5 mins or until thickened.

3. Return Chicken to skillet. Heat through. Sprinkle with cheese.
Garnish with fresh basil, if desired!
