Scranbled Eggs with Avocado


  • A pat of butter
  • A scant teaspoon olive oil
  • 2 eggs
  • 1 quarter of an avocado, peeled and cubed
  • Sea salt flakes
  • Freshly cracked black pepper
  • 1 slice of toast (preferably whole wheat or a nice grainy type)
- Beat the eggs lightly with a fork just until homogenously yellow.
- Heat the butter and oil in a non-stick skillet. When the butter has melted and the bubbles subside, pour in the egg.
- As the bottom of the egg sets, push gently with a wooden spatula towards the middle, letting the uncooked egg run underneath. Keep doing this slowly and methodically until you have very softly set curds of egg. I usually take my pan off the heat in the middle of all this to avoid overcooking the eggs. I like my eggs runny.
- When the eggs are partially set but still wet in places, add the avocado and fold gently.
- Take the pan off the heat (if you haven’t already) and pile the eggs onto the toast. Sprinkle generously with sea salt flakes and freshly cracked black pepper.

When I saw this dish in the kitchn I knew I had to try it. It is luscious, creamy on creamy, cozy made edible…perfect on a rainy morning. Perfect on any morning truth be told. So easy to whip up that I’m a touch embarrassed I went and made a recipe out if it. Really, just make the scrambled eggs the way you do best and fold the avocado in. You won’t be sorry. Unless you don’t like avocado. Then try this instead.

Easy and FAST Hard Boiled Eggs


EASY TIP! You can EASILY make hard boiled eggs in a food steamer. 25 mins and that's all it takes and the egg shell comes off so easily too! I just made these!

Feta Eggs Recipe

Ingredients

1 tablespoon I can't believe it's not butter
1/4 cup chopped onion
4 eggs, beaten
1/4 cup chopped tomatoes
2 tablespoons crumbled feta cheese
Salt and pepper to taste


Directions
Melt butter in a skillet over medium heat. Saute onions until translucent. Pour in eggs. Cook, stirring occasionally to scramble. When eggs appear almost done, stir in chopped tomatoes and feta cheese, and season with salt and pepper. Cook until cheese is melted.

Delicious Breakfast that I just made!


I added a little water and cayenne pepper sauce to the eggs.
I put spinach, onions and green pepper into the mixture.
Topped it with a sprinkle of shredded mexican cheese and salsa!

I am happy to say that I actually worked out today and feel great! I haven't worked out in 3 days....with my father in law getting married this past weekend and i was worn out!

2 eggs with 3/4 cup skim milk
A little nonfat cheese
spinach, green pepper, red onion
Black beans


Lunch Green smoothie with Green Tea, Spinach, Grapes, strawberries and ice.
1/2 scoop of Vanilla protein powder
Blended in Magic Bullet.



Dinner



Steak salad with chickpea salad i made yesterday on it.
A little cheese. Tzatziki sauce on top.

Breakfast: Tuesday 7-21


I really attempted to make an omelette. HA HA! It turned into scrambled eggs with spinach and onions. I put a sprinkle of cheese on top, chopped tomatoes and some cayenne pepper. I had to make it a quick breakfast, so that's all I had besides a cup of Decaf Coffee!

I am definitely full! WHEW! I should have just had the pancake and nectarine. I did not need the yogurt and blueberry smoothie. I put PureVia natural sweetener and cinnamon on my pancake. The smoothie...was just 4 Tablespoons of nonfat plain yogurt with a handful of blueberries...and i used the Magic Bullet to blend it. The coffee is Decaf! YAY! I am finally off of caffeine. Needed to get off the caffeine...to level out my blood sugar. Spikes in our blood sugar....is what makes us want to snack, when the blood sugar drops after the spike. So no more of that and i feel incredible. It tastes more like french toast to me! Very delicious!

Here are the nutritional facts of my whole breakfast.

Carbs 23g
Fat 5 g
Protein 28 g.

I would recommend this pancake...to anyone that is eating healthy...but wants to feel like they cheated. I am feeling guilty in a good kind of way right now. ha ha!

***My Dinner Tonight***



Okay...so I couldn't decide whether i wanted a carbo dinner or protein. I figured a protein dinner would be a better choice. Sooooo....I sauteed some onions and mushrooms. Then I scrambled a couple eggs....put spinach and mozzarella cheese and salt and pepper. There is a little parmesan cheese on top. In the bowl on the right are tomatoes with italian seasoning and cucumbers! It tastes sooo much like a mushroom pizza! I haven't had pizza in ages!!!
