1. Ricotta Fruit Cup. Fill a wineglass or parfait glass half-full with blueberries or fresh sliced strawberries. Top with 1/2 cup fat-free ricotta cheese, then drizzle with honey and sprinkle with cinnamon.
2. Roasted Fruits with Honey. Halve fruits such as peaches or nectarines and remove the pits. Place on a baking sheet and drizzle each half with 1 teaspoon honey. Roast in a 350°F oven until tender and juicy, about 15 minutes.
3. Banana-Peanut Butter Sandwich. Peel a banana and cut it in half lengthwise. Spread 1 tablespoon creamy reduced-fat peanut butter onto the cut side of one half, then top with the other half to create a banana sandwich. Cut into bite-size pieces, if desired.
4. Low-Cal "Ice Cream" Sandwich. Create a homemade frozen treat by sandwiching 2 tablespoons sugar-free whipped topping between 2 fat-free chocolate graham crackers. Cover with plastic wrap and pop into the freezer for 1 hour.
5. Baked Maple Apple. Core and halve an unpeeled apple and place it in a small microwavable bowl. Cover with plastic wrap and heat on high power in a microwave for 2 minutes. Drizzle each half with 1 tablespoon sugar-free maple syrup, then sprinkle with cinnamon or allspice.
6. Low-Cal Peanut Butter Cup. Stir 1 teaspoon creamy reduced-fat peanut butter into a sugar-free, fat-free chocolate pudding cup. It tastes just like a peanut butter cup!
7. Banana Milkshake. Peel an extra-ripe banana, cut it into chunks, and freeze in a ziptop bag. In a blender, process the frozen chunks with 1 cup fat-free milk or fat-free yogurt.
8. Healthy Latte. For a healthier alternative to the drinks sold at many coffee chains, pour 1 cup of cooled coffee over ice, add a small scoop of fat-free vanilla frozen yogurt, and top with a sprinkling of nutmeg or cocoa powder.
9. Angel Food Trifle. In a parfait glass, layer 2 small chunks of angel food cake (equal to one slice) with sliced berries of your choice and 1/2 cup fat-free frozen yogurt.
10. Not-So-Decadent Chocolate-Covered Strawberries. Dip 5 or 6 large fresh strawberries into 2 tablespoons fat-free chocolate sauce for a guilt-free version of chocolate-covered strawberries.

In a blender, blend milk, sugar, vanilla, and the quartered banana together at high speed until mixture is smooth. Pour into a bowl and fold in yogurt. Chill mixture for at least 45 minutes in refrigerator; when chilled, spoon mousse into 4 dessert dishes. Cut 4 1/4-inch slices from banana, and stand 1 banana slice on its side in each bowl. Makes 4 servings.

Ingredients:
Directions: Place chocolate chips and coconut oil in a medium sized bowl and heat for approx. 1 minute on high in the microwave. Stir very well until all clumps are gone. Now take the raisins, 1/2 cup at a time and stir into the chocolate. Pour raisin mixture onto a large plate lined with parchment paper and spread into a thin layer. Place in freezer to firm for about 5-10 minutes. Break apart the raisins with fingers and serve! Keep leftovers in the fridge.

Tips & Techniques
To melt chocolate, microwave on Medium for 1 minute. Stir, then continue microwaving on Medium, stirring every 20 seconds, until melted. Or place chocolate in the top of a double boiler over hot, but not boiling, water. Stir until melted
Ingredients:
2 bananas sliced and then frozen
2 Tbsp fat free milk( you can use almond, rice or soy milk as well)
¼ tsp vanilla extract
Directions:
1. SLICE and FREEZE your bananas. It’s really important to slice your bananas BEFORE you freeze them or you can burn out the motor in your blender, chopper, food processor, etc.
2. Add vanilla extract and milk and blend away until smooth and creamy. You may have to add 1 additional Tbsp of milk if it’s too thick.
You can top it with 1 Tbsp of your favorite caramel sauce or chocolate sauce (it spreads further if it’s hot) and drizzle with a little whipped cream. (Make sure and add the points for your toppings)

* Chocolate Peanut Butter Banana Ice Cream ~ Add 1 Tbsp unsweetened cocoa powder & 1 Tbsp Peanut Butter
* BANANA SPLIT ~ Add 3 frozen strawberries and drizzle with 1 Tbsp Chocolate Syrup and Whipped Cream
* Strawberry Banana Frozen Yogurt ~ Add 4 oz Fat Free Strawberry Yogurt with 3 Strawberries.

2 tablespoons bittersweet chocolate chips or chopped dark chocolate
1 teaspoon honey
1 teaspoon unsalted butter
Small pinch of salt
1 small banana, peeled and cut into 1-inch chunks
1 teaspoon chopped toasted walnuts
Directions
In a double boiler or microwave-safe bowl, melt the chocolate with the honey, butter, and salt, stirring frequently. Serve the chocolate sauce and walnuts in bowls for dipping, accompanied by the banana chunks.
Chocolate Pudding (made with Avocado!)
Dense, fudge-y and ultra-healthy, these brownies are a great alternative to traditional brownies! It's amazing how they taste like chocolate and fudge and not beans! Chef's Notes: Rolled oats run through the food processor may substituted for the instant oats. Use optional sugar if your bananas are still green and not very ripe.
Preheat oven to 350 F. Grease an 8x8" pan and set aside. Combine all ingredients, except oats, in a food processor or blender and blend until smooth, scrapping sides as needed. Stir in the oats and pour batter into the pan. Bake approximately 30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before slicing. Chef's Note: if you find these brownies are too soft or too fudge-y, add another 1/4 cup oats or flour.

1 and 3/4 c whole wheat pastry flour
1 and 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 eggs
1/2 c Natural Sweetener
1/2 c low-fat vanilla yogurt
1/3 c canola oil
1 tsp vanilla extract
1 and 1/2 c shredded zucchini
3 c semisweet chocolate chips, divided (MUFA)
1. Preheat the oven to 350°F. Coat an 11" x 8" baking pan with cooking spray.
2. Combine the flour, baking powder, baking soda, and salt in a large bowl.
3. Whisk the eggs, sugar, yogurt, oil, and vanilla extract in a medium bowl. Whisk in the zucchini and 11/2 cups of the chips. Stir into the flour mixture just until blended. Spread into the prepared pan and bake for 30 minutes or until lightly browned and a wooden toothpick inserted in the center comes out clean.
4. Remove from the oven and sprinkle the remaining 1 1/2 cups chips over the cake. Spread with a small spatula as they melt to form an icing, placing back into the warm oven, if needed, for about 1 minute.
