Orange Mango Popsicles-no sugar added






Ingredients

Directions
Mix all ingredients in blender until smooth. Taste and see if you need to add stevia. Pour into Popsicle molds and freeze.
Makes about 4 cups after blending.

Sugar Free Chocolate Pudding


ngredients
  • 1 banana
  • 1/2 avocado
  • 2 tablespoons cocoa powder, unsweetened
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Optional: 1/2 teaspoon-1 teaspoon Chocolate Sweetleaf Stevia, in liquid form
Directions
  1. Combine banana and avocado in food processor. Process until smooth.
  2. Add vanilla, cinnamon and cocoa and process again until combined.
  3. Serve with your favorite toppings. We love  nut free Trader Joe’s Granola with 3 berries!

Pumpkin Vanilla Sugar-Free Smoothie

Ingredients
  • 2 tbsp flax seed, ground
  • 1/4 c. cottage cheese, low-fat or vanilla greek yogurt
  • 1/2 banana
  • 1/2 c. almond milk (or any milk you like)
  • 1/4 c. pumpkin, canned
  • 1/4 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 1/4 c. unsweetened applesauce
  • (optional) SweetLeaf Stevia, vanilla creme to taste
  • 1/2 c. ice
Directions
Toss all ingredients together in blender and process until smooth!

Chocolate Mousse



Ingredients

Directions

  1. Open the can of coconut milk and leave it in the refrigerator overnight and uncovered. DO NOT SHAKE THE CAN before opening.
  2. Spoon out only the cream and leave the water at the bottom of the can, it should be about a cup. You can save the water for a smoothie!
  3. Add the coconut “cream”, cocoa, and stevia to the bowl of a stand mixer and whip on setting 2 for about a minute, scrap the sides of the bowl to make sure its all incorporated.
  4. That’s it! Store uncovered in the fridge and it will continue to thicken!

Chocolate Brownies



Ingredients

  • 4 tbsp. coconut oil
  • 4 tbsp. milk, 1%
  • 2 tsp. vanilla extract
  • 2/3 c. unsweetened applesauce
  • 1/2 c. unsweetened cocoa powder
  • 1/2 tsp. salt
  • 1 c. whole wheat pastry flour
  • 1/2 tsp. baking powder
  • 2-4 packets Sweetleaf Stevia (4 makes them super sweet) or 4 -6 tsp. Stevia powder
  • Optional: 1/2 c. chopped nuts or chocolate chips

Directions

  1. Preheat oven to 325 degrees.
  2. Cream together oil, milk, vanilla, applesauce.
  3. Add cocoa, flour, baking powder, salt and stevia and mix well.
  4. Add optional ingredients if desired.
  5. Line an 8 by 8 baking dish with parchment paper.
  6. Bake for 25-30 minutes and FALL in LOVE …..YUM!

Chicken Cherry Salad with Quinoa



Ingredients

  • 1/2 c. cooked Quinoa
  • 2 oz. cooked chicken breast
  • 1 scallion chopped
  • 1/2 tbsp. toasted almonds
  • 1 tbsp. dried cherries
  • 1/2 tbsp. extra virgin olive oil
  • 1/2 tbsp. lemon juice
  • 1 tsp. garlic, minced
  • 1 tsp. fresh parsley
  • salt and pepper to taste

Directions

  1. Mix the oil, lemon juice, garlic, salt and pepper and pour onto the quinoa, combine well.
  2. Add toppings!
  3. Enjoy!

Sloppy Joes



  • 2 tbsp. olive oil
  • 1/2 c. onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp. chili powder
  • 1 1/4 lb. lean ground turkey
  • 1/4 tsp. salt
  • 1/2 c. water
  • 1 tbsp. Worcestershire sauce

  • 1 tbsp. tomato paste
  • 1 tbsp. quick-cooking oats
  • 3 scallions, chopped
  • 6 whole grain buns

Directions

  1. Heat the oil in a skillet and cook the onions until soft.
  2. Add the turkey, garlic, salt and chili powder and cook until no longer pink.
  3. Add water, Worcestershire sauce, barbecue sauce and tomato paste and bring mixture to a boil. Lower heat and simmer covered for 15 minutes. Stir occasionally.
  4. Stir in oats and scallions. Uncovered cook on low until mixture starts to thicken. If its too saucy cook longer, if its not saucy enough add a few tablespoons of water.
  5. Serve on delicious whole grain buns!

Meatballs



Ingredients

  • 1 1/2 lb. ground turkey or beef
  • 1/2 c. grated Parmesan cheese
  • 1 large egg
  • 1/2 c. whole wheat bread crumbs
  • 2 tbsp. Italian seasonings
  • 1/2 c. whole wheat pastry flour or whole wheat flour is fine too.
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. garlic powder
  • 1c. lite sour cream
  • 2 c. chicken broth or beef if using ground beef.
  • (optional) fresh, chopped parsley

Directions

  1. Mix together all ingredients in a bowl, except sour cream, whole wheat flour and broth. Make 20 meatballs and set aside.
  2. In another bowl stir together sour cream and broth and pour half of that mixture on the bottom of your crock pot. Reserve the rest of the broth mixture in the refrigerator until the last hour of cooking.
  3. Cook on high for 3-4 hours or on low for 7-8 hours until meatballs are cooked through.
  4. Add the whole wheat flour to the reserved broth mixture in a sauce pan over medium heat until the sauce thickens. Pour this over the meatballs and cook an additional 1/2-1 hour. Sprinkle with some fresh parsley and enjoy over pasta!

Chicken Burritos


Ingredients

  • 2 1/2 pounds boneless chicken breast, sliced like tenders
  • bottle of Italian dressing of choice
  • package of tortilla’s of your choice
  • package of shredded cheddar cheese
  • optional: cooked sweet peppers, onions, mushrooms, re-fried beans

Directions

  1. Preheat oven to 350 degrees.
  2. Place sliced chicken breast in a 9 x 13 baking dish. Cover the chicken with half the bottle of dressing. If you have up to five pounds of chicken breast and using another baking dish use the rest of the dressing on that chicken.
  3. Bake for 1 hour until chicken is cooked through and no longer pink when sliced.
  4. Chop up the chicken when done and lay 2 oz. of chicken on a flat tortilla under a piece of aluminum foil if you are freezing them. Place 1/4 c. shredded cheese on top of the chicken and any other optional ingredients. Fold lengthwise, then fold the two ends and fold over final piece lengthwise.
  5. 2 1/2 pounds of chicken makes about 18 tortilla’s.

Sugar Free Fudge


Ingredients

  • 2 1/2 c. dark chocolate chips ( I used grain sweetened)
  • 1/3 c. coconut milk, canned, mixed well
  • 2 tsp. Sweetleaf Stevia in liquid form or 1/4 c. raw honey (though honey will change your nutrition info)
  • a dash of salt
  • 1 tsp. pure vanilla extract

Directions

  1. Stir coconut milk, chocolate chips, vanilla, stevia (or honey) and salt in a small 3 or 4 quart crock pot.
  2. Cover and cook on low 2 hours.
  3. Uncover, turn off and let sit (no stirring please) for one more hour.
  4. Stir well for 5 -10 minutes until smooth.
  5. Line a one quart casserole dish with parchment paper and pour mixture in.
  6. Cover and refrigerate 3 or 4 hours until firm.

Banana Blueberry Bread



Ingredients

  • 3 bananas, mashed
  • 2 eggs
  • 2 c. whole wheat pastry flour
  • 1 tbsp. flaxseed meal
  • 1 tsp. pure vanilla extract
  • 1/2 c. milk, 1%
  • 1/2 c. applesauce, unsweetened
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 c. blueberries
  • 6 packets Sweetleaf Stevia or 1/2 c. honey (this will change your nutrition info)
  • 1/4 c. water
  • (optional: 1/2 c. walnuts or pecans)

Directions

  1. Preheat oven to 325 degrees.
  2. In a stand mixer, add eggs, vanilla, milk, applesauce and stevia or honey and blend well.
  3. Add bananas and blueberries and mix until combined.
  4. In another bowl combine flax, flour, salt, baking powder and baking soda and mix well.
  5. Mix one cup flour mixture to mixer. Add the other cup of flour mixture and then the water and mix until its all incorporated.
  6. Spray a loaf pan with nonstick cooking spray and pour mixture into pan.
  7. Bake for 60-75 minutes until a toothpick in center comes out easily with just a few crumbs.

Chicken and Bean Stew


Ingredients

  • 2 c. shredded, cooked chicken
  • 4 c. chicken broth, low sodium
  • 3 tsp. minced garlic
  • 1/2 tsp. salt
  • 2 tsp. cumin
  • 1/2 tsp. oregano
  • 1 can of hominy, drained and rinsed or corn
  • 1 can black beans, drained and rinsed
  • 1 c. salsa or 1 can of diced tomatoes
  • 1 can of butter (Lima) beans or cannelini beans, drained and rinsed
  • 1/2 c. lite sour cream
  • optional toppings: shredded cheese, fresh cilantro, sour cream, chives

Directions

  1. Combine all ingredients in the crock pot , except sour cream and optional toppings.
  2. Cook on high for 3 hours. Add sour cream to crock pot and mix well.
  3. Cook additional 1/2 hour to hour on low.
  4. Done! Add favorite toppings and enjoy!

Healthy Baked Chicken Fingers

INGREDIENTS

  • 4 boneless, skinless chicken breasts, cut into strips
  • 1/4 c. flax seed, ground
  • 1/4 c. oat bran
  • 1/2 c. whole wheat bread crumbs
  • 1/4 c. Parmesan cheese
  • 2 tbsp Italian seasoning
  • 1 tbsp garlic powder
  • 2 tsp.salt
  • 2 tsp pepper
  • 3 eggs
  • 1/2 c. lemon juice

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Combine the dry ingredients with the spices.
  3. Whisk the eggs with the lemon juice.
  4. One strip at a time, dip chicken in the eggs, then the dry mixture and place on lined baking sheet.
  5. Bake for 20-30 minutes until golden brown.
  6. Place under broiler for 5-10 minutes to get them crispy!

Quick Italian Marinara Sauce: No Sugar Added


Ingredients

  • 1 tablespoon extra virgin olive oil
  • 3 cloves of garlic, minced
  • 2 (28 oz) cans of crushed tomatoes
  • 11/2 cup water
  • 2 teaspoons dried basil
  • 2 teaspoons dried fennel seed
  • 2 teaspoons dried parsley
  • 2 teaspoons salt
  • pepper to taste
  • red chili pepper flakes to taste
  • Optional: Top with fresh chopped basil and grated Parmesan cheese

Directions

  1. Heat the oil in a large dutch oven or pot. Saute the garlic.
  2. Add all the other ingredients to the pot and bring to a boil.
  3. Once at a boil, cover and reduce heat. Simmer for 25-30 minutes.
  4. Add optional toppings and serve over your favorite pasta!
