Mexican Ground Turkey Rice Bowl


 2 lbs ground turkey
3/4 cup onion.
Brown turkey and onions and drain. Add taco seasoning according to how much turkey you use.  I used 4 Tablespoons of homemade Taco Seasoning (recipe below)
2 or 3 cups zucchini (you may want to use more, depending on your taste, I used 2 decent size zucchinis from the farmers market)
1 can diced tomatoes drained
2 Ears of Sweet Corn cut off of the cob.
1 1/2 cups water.
1 1/2 cups uncooked instant brown rice.
Bring to a boil. Add 1 1/2 cups uncooked instant brown rice. Reduce heat and cover/simmer for 5 min or until rice is soft and liquid is absorbed.
You can sprinkle cheese on top and let it melt.

Taco Seasoning Recipe
Ingredients:

2 Tbsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp red pepper flakes (Aleppo peppers would add a wonderful depth of flavor)
1/2 tsp oregano
1 tsp paprika
1 Tbsp cumin
2 1/2 tsp salt (I recommend Real Salt.)
2 tsp pepper

Directions

1.  Combine all ingredients in a small bowl.
2.  Mix well.
3.  Store in a tightly closed container.

Healthy Sesame Ginger Rice




Ingredients:

You will need:
1 medium stovetop cooking pot with lid
1 cup brown rice
1 tbsp finely chopped ginger
1 tbsp finely chopped garlic
2 tbsp sesame seeds
1 tbsp toasted sesame oil
2 1/2 to 3 cups water
4 - 5 stalks of green onion, finely chopped
1 tbsp soy sauce

Directions:

1) Add toasted sesame oil to bottom of pot and warm to medium heat, then reduce to low.
2) Gently sautee garlic & ginger on low heat to prevent burning
3) Add sesame seeds and stir.
4) Add rice, soy sauce and water to pot and continue cooking on medium heat for 30 to 40 minutes (with lid on). Check after 30 minutes to see if rice is close to being done.
5) Remove from heat when done.
6) Add finely chopped scallions and mix into the recipe.
Ready to eat!

TIP: Serve this alongside a fresh piece of fish, some simply prepared shrimp, plain sauteed tofu, or with beans (I recommend lentils or garbanzo beans).

Ways to Make Brown Rice Taste Delicious


***Cook brown rice with a beef or chicken broth and parsley, garlic powder and seasonings to make a good flavor. Before serving put some soy sauce or a1 sauce in it and blend.
***Add sauteed garlic, lemon juice, minced onions, cilantro and a bit of olive oil....oh, and tomatoes...
***Instead of using plain water to cook, use a chicken or vegetable broth.
Use olive oil instead of butter. Butter and brown rice is weird and makes it go rancid easier.
***What I do with rice usually is to fry the uncooked grains with a spray of oil and onions and then pour stock in it and cook it in that. Gives it some more flavor I find...
******An idea a friend gave me that is awesome and reasonable calorie wise is add 1/2 cup corn black bean salsa, about 4 blue Aztec chips and 1/4 cup of shredded cheese to a cup of rice. It is amazing!
********My kids love to add popcorn seasonings to their brown rice. Kernel Seasons and Land O Lakes make different flavors- sharp cheddar, white cheddar, parmesan garlic, etc. Also try cooking it in low sodium chicken or veggie broth or using low sodium soy sauce.

*****Different seasonings like garlic powder, onion powder, chili powder, anything to add whatever type of flavors that you like! Mrs. Dash makes great salt free seasonings also!
*****Adding vegetables is good. And definitely broth or bouillon cubes enhance it. We often cook it ahead and then add to casseroles, like maybe Spanish rice: Cooked rice, sauteed peppers, canned diced tomatoes, chili powder, cumin, oregano, cayenne or hot peppers to taste, and maybe leftover chicken or lean beef or pork, plus any other vegetables you think will work, such as celery, zucchini, canned black beans, etc. Then top with shredded cheese and bake at 350 until bubbly and starting to brown.
******With any kind of rice, I like adding a handful of sweetcorn and a handful of frozen peas a few minutes before the end of the cooking time. Or some lightly sauteed mushrooms and peppers stirred through. They both work for me.
****** tried uncle bens brown rice and didn't like it because it was plain and dry and I had to add salsa and lite sour cream, then I made California brown rice and I liked it so much that I ate it plain?? I guess just try some different brands, I like a little garlic and I can't believe its not butter spray.
****I cook mine with water, and mix salsa into it.
*****I like to use a rice cooker and use a cup and a half of water for ever cup of rice. Now it will come out a little soft. That is ok. Then you put the warm rice in a bowl with some Cinnamon and sweetener and a little milk. I like to use soy milk. It's just like a nice oatmeal.

Quick and Easy Brown Rice Casserole
















(makes 4 servings)

Ingredients:

  • 2 C cooked brown rice (I used a whole package of 90 second brown rice)
  • 3 eggs, beaten
  • 1/2 C black beans
  • 1/2 C hummus
  • 1/2 C chunky salsa
  • Half a large green pepper, chopped
  • 1 tsp. pepper
  • 1 tsp. chili powder
  • Sprinkle of salt

Instructions:

Preheat oven to 375.

1) Combine all ingredients in a large bowl. Pour mix into a non-stick or sprayed baking pan/casserole dish.

2) Bake for 25 to 30 minutes, or until egg is firm.
