Apple Pie Oatmeal Recipe






1 serving

Ingredients:
  • 1/3 cup regular oats
  • 1 tablespoon chia seeds
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger + pinch of kosher salt
  • 1 + 1/4 cups Almond Milk
  • 1  apple, peeled and cut into 1 inch pieces
  • 1/2 cup unsweetened applesauce
  • 2 tbsp chopped walnuts and a little honey, for sprinkling on top

Directions:
1. In a medium pot over medium heat, whisk together the 1/3 cup oats, peeled and chopped apple, 1 tbsp chia seeds, 1/2 cup unsweetened applesauce, 1.25 cups Almond milk, 1 tsp cinnamon, 1/4 tsp ginger, pinch of kosher salt. Stir well!

2. Heat over medium heat for about 8 minutes, stirring often. When the mixture thickens and the liquid is absorbed, it is ready.

3. Pour into a bowl and sprinkle with chopped walnuts, and a drizzle of honey.

strawberry and banana cheesecake oatmeal



INGREDIENTS:
-1/3 cup of oats
-1/2 cup of water
-chobani low-fat strawberry and banana greek yogurt
-1 banana (mashed)
-1 cup of strawberries
-1 tbsp low-fat cream cheese
-1 tbsp peanut butter
-drizzle of organic honey

INSTRUCTIONS:
Heat the water on the stove until it reaches a boil. Add in the oats. When the oats have absorbed most of the water reduce the heat to medium and add in the mashed banana. Stir the oats and banana together and then transfer to a bowl. Spread the chobani over the oats and top with the strawberries, cream cheese, and peanut butter. I then microwaved my bowl for about 30 seconds to melt the toppings but that is optional. Drizzle with honey, stir, and enjoy!

Blueberry Banana Cobbler

Ingredients
1 banana
1 cup frozen blueberries
1/4 cup old fashioned rolled oats
1 tablespoon raisins
1/8 teaspoon vanilla
2 tablespoons chopped raw almonds
2 tablespoons unsweetened coconut
1/4 teaspoon cinnamon

Instructions
Combine banana, berries, oats, currents and vanilla in a microwave safe dish. Microwave for 2 minutes.
Top with almonds, coconut and cinnamon and microwave for 1 minutes. Serve warm.

Savory Oatmeal






This is hardly a recipe, and really, I suggest you go with your favorite basic recipe for oatmeal (I usually go with 1/2 cup of oats and 1 1/2 cup of water -- this will make me two servings). I used steel cut oats here because I felt the texture would lend itself well to savory preparation (although I am sure rolled oats would be good as well). What is key here is that you use the best possible ingredients you can find. I know, when is that ever not key right? Well, in this case more than others as there are so few ingredients so each is a major player. Now place one serving of hot oatmeal in your favorite cuddle bowl. Top with a couple of swirls of olive oil, a sprinkling of sea salt flakes, a grinding of black pepper, and generous shavings of parmesan cheese. Now tuck in and prepare to be converted. I suggest keeping the condiments near because you may want to adjust as you work through you bowl. I definitely like adding more parmesan at some point.

Apple Cinnamon Refrigerator Oatmeal



Ingredients
  • 1/4 cup uncooked old fashioned oats
  • 1/3 cup skim milk
  • 1/4 cup low-fat Greek yogurt
  • 1-1/2 teaspoons dried chia seeds
  • 1/2 teaspoon cinnamon
  • 1 teaspoon honey, optional (or substitute any preferred sweetener)
  • 1/4 cup unsweetened applesauce, or enough to fill jar

Directions
In a half pint (1 cup) jar, add oats, milk, yogurt, chia seeds, cinnamon and honey. Put lid on jar and shake until well combined. Remove lid, add applesauce and stir until mixed throughout. Return lid to jar and refrigerate overnight or up to 2 days. Eat chilled.

Brown Rice Porridge


Heres a recipe for a different way to spice up your regular oats in the morning – I know they don’t look much different, but they have a different, but delicious texture!

Makes 2 servings:
1 cup cooked brown rice (I used leftovers)
1 cup water
2 T rolled oats (uncooked)
1 whole banana (or 1/2 of one)
Some cinnamon

Heat these ingredients on high until it comes to a boil. Reduce heat to a simmer, cover, and cook for 7-8 minutes. The porridge will thicken up like regular ol’ oats. I sprinkled flax and had a spoonful of pb on top. This makes two servings so I just eyed it and put about half in the fridge for later or tomorrow.

Ideas For Oatmeal

Oatmeal 5 Ways



Oatmeal is a quick simple breakfast. Warm on the tummy, keeps you feeling nice and full all morning long, plus it’s helpful to the cholesterol levels too!

I know for me personally…if I’m going to eat (and enjoy) oatmeal, it has to be heavily “flavorized.” And by “flavorized,” I mean it has to have enough sweetness and flavor from some other ingredient to make it palatable.

When it comes to oatmeal, I guess I’ve got a tough palate!

So if you’re like me, or if you’re just looking for a new option for your bowl of “warm your tummy” oatmeal, try out these options…

1. Mix in some diced apples with some sprinkles of cinnamon and nutmeg plus a little sweetener*.

2. Top the warm oatmeal with yogurt, dried cranberries and a few sprinkles of cinnamon.

3. For an indulgent bowl of oatmeal, swirl in peanut butter with chocolate chips (or cocoa powder plus sweetener*).

4. Toss some chopped nuts on top too. Walnuts go great with apples and dried fruit and pecans work well with the maple flavor!

5. And for a little boost of Omega 3s, sprinkle some ground flaxseed over top. Won’t change the taste one bit!

Snack: Yogurt and Oats
















Ingredients
8 ounces plain yogurt
1 scoop vanilla protein powder
1/4 cup uncooked oats
1 teaspoon sugar-free jelly
Non-calorie sweetener to taste ( I like TruVia natural sweetener)

Directions
Place yogurt in oversized bowl. Using a whisk, beat yogurt until smooth. Slowly add protein powder, and mix well. Add raw oats, stir in sugar-free jelly and non-calorie sweetener to taste.

Oatmeal & Peanut Butter Ricotta Cookies

















Prep Time: 2 minutes

Cook Time: 10 minutes

Total Time: 12 minutes

Yield: 5

Serving Size: 5

Ingredients

  • 1 tbs natural peanut butter
  • 1/4 cup old-fashioned oats
  • 1/4 cup reduced-fat ricotta cheese
  • 2 packets (or to taste) Stevia
  • 1/4 tsp baking powder
  • 1 egg white
  • dash cinnamon

Instructions

  1. Preheat oven to 350 degrees.
  2. Line pan with parchment paper.
  3. Mix everything together with a fork, pressing to mash ricotta cheese.
  4. Spoon 5 cookies on to pan.
  5. Bake for 10-12 minutes or until tops of cookies start to brown.

Most AMAZING Breakfast

I have been working VERY hard doing P90X and decided to make something special for myself for breakfast this morning!

Blueberry Oatmeal Pancakes

Quick and easy HEALTHY and CLEAN pancakes that taste totally indulgent!!! Top with your favorite fruit, spreads, nuts or nut butters for extra carbs and fat!!!
I drizzled a little bit of honey on the pancakes and sprinkled cinnamon on my banana!

I only ate one of the pancakes. This is SO filling! Maybe I will save the other one for lunch! Or let my hubby have it!


Ingredients

1/2 cup uncooked oatmeal
1/2 cup fat free egg beaters or egg white equivalent (OR 2 eggs)
1/2 cup fresh blueberries
1 tablespoon honey
Purevia Natural Sweetener (Optional)

Directions

Place mix all ingredients in small bowl and blend using a stick blender or can be made in a food processor or stand blender!!! Mix only until berries a slightly broken--2-3 pulses should be sufficient!!!


Let stand 5- 10 minutes to thicken!!! Can be made the night before and cooked in the morning!!!



Spray a non stick pan with non stick spray and heat before adding batter!!! Divide evenly into 3 pancake and cook throughly before attempting to turn!!! Cook evenly on both sides and cook even golden brown!!!



Top with favorite fruit, nuts or additional honey!!
Make several batches and keep them in the freezer!!! Heat as needed!!!

Chocolate Oatmeal


Now I know some eyebrows are going up seeing the word "Chocolate".

I was not happy, when i opened up the skim milk that i bought recently and it is supposed to be good for another week, but it is sour. So I had to make my oatmeal with water.

Here is what is in my oatmeal today:

1/2 Kroger 100% Whole Grain Oats
1 cup Filtered Water
1/2 cup blueberries
1/2 banana
1/2 scoop Vanilla protein powder
1 packet of PureVia (natural sweetener)
1 teaspoon of natural unsweetened cocoa

Homemade All Natural Oatmeal Cookies

Here's another Oatmeal Cookie Recipe I found! I'm gonna try this one!



All-Natural Oatmeal Banana Cookies

1/3 c. butter (I used salted)
3 ripe bananas, pureed in blender or well mashed
2 c. uncooked quick-cooking oats – important to use quick cooking. Old Fashioned probably tastes too “oat-y”
1/4 c. skim milk – I omitted this completely because my batter was plenty moist
1/2 c. raisins – or Craisins or chocolate chips
1 t. vanilla extract

Instructions:
1. Preheat oven to 350 degrees.
2. Melt butter or margarine in a microwave-safe mixing bowl.
3. Add all remaining ingredients, but watch the milk because you may not need all of it.
4. Let stand for about 5 minutes, until oats are wet.
5. Lightly grease a cookie sheet.
6. For each cookie, spoon out about 1 T. of dough and drop it onto the greased cookie sheet.
7. Bake the cookies for 15 to 20 minutes.
8. Let cool on the cookie sheet for about 1 minute.
9. Move the cookies to wire racks or a towel to cool.

Serving Size: 2 cookies Yield: 15 servings

Per serving: 110 calories (40% from fat), 4.5 g total fat, 0 mg cholesterol, 35 mg. sodium, 17 g. total carbohydrate (2 g. dietary fiber, 7 g. sugar) 2 g. protein.

Natural Oatmeal Cookies



These are not bad at all. They aren't real sweet!

I used honey, instead of the Agave Nectar. It's only a Tablespoon and divided by 16...not bad at all! I bet they would be good cold! I went and did my calculations and the only difference between using the agave nectar and honey is that the honey is 1 gram more in Carbs.



Ingredients
    2 C quick oats
    1/4 tsp. salt
    2 ripe mashed bananas
    1 egg
    1 T agave nectar
    1 t. cinnamon

Directions
Combine well, drop by spoonful onto cookie sheet. Bake at 350 for 10 minutes.

Number of Servings: 16

My Breakfast for today


This is what I am having for breakfast today.
I added cinnamon and a couple walnuts to my oatmeal too!
I really like it so much better than the regular oatmeal and it tastes good with the walnuts in it!
