Healthy Baked Chicken Fingers

INGREDIENTS

  • 4 boneless, skinless chicken breasts, cut into strips
  • 1/4 c. flax seed, ground
  • 1/4 c. oat bran
  • 1/2 c. whole wheat bread crumbs
  • 1/4 c. Parmesan cheese
  • 2 tbsp Italian seasoning
  • 1 tbsp garlic powder
  • 2 tsp.salt
  • 2 tsp pepper
  • 3 eggs
  • 1/2 c. lemon juice

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Combine the dry ingredients with the spices.
  3. Whisk the eggs with the lemon juice.
  4. One strip at a time, dip chicken in the eggs, then the dry mixture and place on lined baking sheet.
  5. Bake for 20-30 minutes until golden brown.
  6. Place under broiler for 5-10 minutes to get them crispy!
