Sloppy Joes



  • 2 tbsp. olive oil
  • 1/2 c. onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp. chili powder
  • 1 1/4 lb. lean ground turkey
  • 1/4 tsp. salt
  • 1/2 c. water
  • 1 tbsp. Worcestershire sauce

  • 1 tbsp. tomato paste
  • 1 tbsp. quick-cooking oats
  • 3 scallions, chopped
  • 6 whole grain buns

Directions

  1. Heat the oil in a skillet and cook the onions until soft.
  2. Add the turkey, garlic, salt and chili powder and cook until no longer pink.
  3. Add water, Worcestershire sauce, barbecue sauce and tomato paste and bring mixture to a boil. Lower heat and simmer covered for 15 minutes. Stir occasionally.
  4. Stir in oats and scallions. Uncovered cook on low until mixture starts to thicken. If its too saucy cook longer, if its not saucy enough add a few tablespoons of water.
  5. Serve on delicious whole grain buns!
