INGREDIENTS
- 4 boneless, skinless chicken breasts, cut into strips
- 1/4 c. flax seed, ground
- 1/4 c. oat bran
- 1/2 c. whole wheat bread crumbs
- 1/4 c. Parmesan cheese
- 2 tbsp Italian seasoning
- 1 tbsp garlic powder
- 2 tsp.salt
- 2 tsp pepper
- 3 eggs
- 1/2 c. lemon juice
DIRECTIONS
- Preheat oven to 350 degrees.
- Combine the dry ingredients with the spices.
- Whisk the eggs with the lemon juice.
- One strip at a time, dip chicken in the eggs, then the dry mixture and place on lined baking sheet.
- Bake for 20-30 minutes until golden brown.
- Place under broiler for 5-10 minutes to get them crispy!
