Ingredients
- 1/2 c. cooked Quinoa
- 2 oz. cooked chicken breast
- 1 scallion chopped
- 1/2 tbsp. toasted almonds
- 1 tbsp. dried cherries
- 1/2 tbsp. extra virgin olive oil
- 1/2 tbsp. lemon juice
- 1 tsp. garlic, minced
- 1 tsp. fresh parsley
- salt and pepper to taste
Directions
- Mix the oil, lemon juice, garlic, salt and pepper and pour onto the quinoa, combine well.
- Add toppings!
- Enjoy!
